I was feeling lazy tonight and didn’t want to mess up my kitchen too much.
There is not much of a recipe but it turned out well, so I thought I would share it with you.
“Creamy” Chicken Not-so-Alfredo
2 tbsp olive oil
1 diced shallot
4 sliced mushrooms
2 cooked, sliced chicken breasts
1/2 cup non-fat milk
a dash of dill
salt & pepper to taste
3 tbsp 98% fat-free herb & garlic cream cheese
1 bunch of asparagus
Saute shallots, mushrooms and garlic until tender on medium heat. Add chicken to pan and toss until heated thoroughly. Meanwhile, steam asparagus in steamer or in a shallow dish covered with water in the microwave. Measure out the milk and cream cheese, season to your liking with dill/s&p and microwave on high for 3 minutes. Stir the mixture well and let is sit for a few minutes…
